Pearl's Crab Cakes

During college, and for a while after college, I was a cook at the greatest restaurant ever: Pearl's Oyster Bar, on Ramona Street in Palo Alto, California.

While Pearl's is gone, the memories and recipes live on... Here's a special recipe for crab cakes - a Pearl's favorite.

This is for vast quantities (a la restaurants) so you'll have to shrink it down for personal use:
mayo: 10 cups
eggs: 12
whole grain mustard: 12oz
green onions: 4 bunches chopped
lemon juice: 1/4 cup
diced green chillies: 1/2 can
chilli powder: 1 Tbl spoon
jalepenos: 3 level Tbl spoons
red peppers: 1 level Tbl spoon
white pepper: 1 level Tbl spoon
5lb dungeness crab
bread crumbs
